Food writer and former model open plant-based burger joint in Shoreditch

Food writer Gizzi Erskine and model-turned-nutritionist Rose Ferguson are bringing their plant-based burger business to Shoreditch.

Their fast-food joint, F!LTH, will occupy Dirty Burger in the Tea Building as part of a three-month residency.

It follows the brand’s debut at Tate Modern in 2016, when it operated under the name Pure Filth, and appearances since then at Street Feast for National Burger Day.

F!LTH’s signature burger is made using black beans, black quinoa, non-GMO soy mince and a blend of umami paste, sandwiched between a beetroot and sesame bun.

The company combines Gizzi’s experience as a chef, which includes time at Leith’s School of Food and Wine, with Rose’s credentials as a nutritionist, built while studying at the College of Naturopathic Medicine and running her clinic on Harley Street.

The two became friends after meeting at Big Feastival in 2016. Eventually they decided to launch their burger business with the help of entrepreneur Dougal Brech, who now oversees finance and logistics.

F!LTH is opening at Dirty Burger on Friday (January 4).
